Baked Apple Chicken

Ingredients


 1/4 teaspoon Cinnamon 
 2 cups  Apple Juice
 2 Tablespoons  Sweet Peruvian Mesquite Meal
1/2 teaspoon     Salt
 4 to 5 pounds  Chicken, cut into sections
 2 each  Green Apples, Granny Smith cut into round slices 
 2 Tablespoons  Olive Oil 
 1/2 teaspoon  White Pepper
 1/4 cup   Honey

    
Directions

Preheat oven to 375º F  

Combine apple juice, cinnamon and honey together and mix well. Place chicken into marinade and leave for about an hour turning the pieces occassionally.

Next, core and cut Granny Smith apples into rings about 1/2" thick. You should get 6 to 7 slices per apple depending on the size.

Once the chicken is removed set marinade aside and place chicken in a lightly oiled, covered pan and spread apple slices over chicken.  Lightly sprinkle salt, pepper and mesquite meal onto both sides of the chicken. .

Place chicken into the preheated oven for about 1 hour.

About 15 minutes before chicken is to be removed from the oven pour the marinade into sauce pan and on a medium heat reduce sauce to about 1/2 its original volume. This will be used as a sauce for the chicken.
