Barbecued Brisket

Here's a classic American dish with a Mediterranean  flavor. Its long, slow oven cooking (four to five hours) creates an incredibly  tender and flavorful dish.

Ingredients

 1 Tablespoon ground cumin  
 3 or 4  garlic cloves, minced
 1 Tablespoon  dry mustard 
 2 teaspoons  paprika 
 1 Tablespoon  cayenne (adjust to your own taste) 
 1 teaspoons  salt 
 1 Tablespoon  freshly ground black pepper 
 1/2 cup  dark brown sugar
 4 pounds  beef brisket (1 whole brisket is best or baking time will change) 


Directions

Combine spices in a small bowl mixing well. Rub the spice mixture into the brisket and let it sit in a roasting pan until oven is 300 degrees F. Cook the brisket in the oven for 1/2 hour then turn and cook for another 1/2 hour. Cover the brisket tightly and let it cook for 2 3 hours more or longer if desired. As with most roasts let it sit for 15 minutes before slicing to retain juices.
