|8 each||Large Egg Yolks|
Scald the cream with the vanilla bean letting the bean steep for 15 minutes.
In a mixing bowl combine the sugar and egg yolks. Slowly add cream mixture whisking constantly then strain through a chinois and pour into ramekins.
Place ramekins into a two inch or deeper pan filling the pan with hot tap water to a little over half way up the side of the ramekins. Bake at 350 F until custards are just set (20-30 minutes)
When finished remove ramekins and let cool then refrigerate.
The caramelized glazing is done by placing a half teaspoon of sugar on top of the Crème Brule and then using a butane burner to hold a flame to the sugar.
Fruit may be added prior to baking.
