Hummus

Hummus is a really good summer recipe. It goes great with pita bread served with Greek olives, cucumber, sweet cherry or Italian peppers, and tomatoes. Actually, you can put most anything with hummus. Be creative! 

Ingredients

 1 each  Garbanzo beans (Chick Peas), 12oz can rinsed and drained
 3 ounces  Water
 1 Tablespoon  Olive oil
 1/2 teaspoon  Garlic, chopped
 1 head   Garlic, roasted
 1 Tablespoon  Tahini
 1 Tablespoon  Lemon juice
 1/2 teaspoon  Cumin, ground
 1/2 teaspoon  Coriander, ground
 1/2 teaspoon  Salt
 1/4teaspoon  Cayenne pepper

Directions

Combine all ingredients in a mixing bowl. Using a blender or hand-help blender puree until ingredients are combined. I like to grill my pita bread and cut it into 6ths. Then I placing 2 or 3 table spoons of hummus in the center of the plate fanning the pita around the top and alternating the vegetables in a fan around the bottom.
