Indonesian Inspired Pork Roast

(Serves about 6 persons)


Ingredients
 
 1 ea.  Boneless pork loin roast (2 lbs.)

 Coating 

 
 1/4 cup  Creamy peanut butter
 3 Tablespoons  Soy sauce
 2 Tablespoons  Ground coriander
 1 1/2 tsp.  Ground cumin
 1/2 tsp.  Chili powder
 1 Tablespoon Fresh, minced garlic  
 1 Tablespoon  Lemon juice
 
 
Peanut Sauce

 1 cup   Soy sauce
 2 Tablespoons  Pineapple juice
 1 Tablespoons  Fresh, minced garlic
 1/3 cup  Dry sherry
 1/2 Tablespoons  Fresh, minced ginger
 1/2 cup  Chopped, unsalted peanuts

  
Directions:

Place roast in a greased baking dish after rubbing coating mix over pork roast. Bake at 325 degrees until pork reaches 160 degrees (about an hour and 15 to 20 minutes).

In a sauce pan combine ingredients for peanut sauce omitting the peanuts. Bring sauce to a boil then remove from heat. Add peanuts a few minutes before slicing pork roast to prevent peanuts from becoming soggy.
