Mandarin Spinach Salad

 Ingredients 

 1/4 cup  Olive oil
 3 Tablespoon  Sugar, divided 2 + 1
 2 Tablespoon     Vinegar
 1 Tablespoon  Fine chopped fresh parsley
 1/2 teapsoon  Salt
 1/4 teapsoon      Fresh ground black.pepper
 1/4 teapsoon     Red pepper sauce, hot
 8 cups     Fresh spinach, packed
 1 cup       Celery, bias-cut 1/8" 
 3 Tablespoon  Chopped green onion
 1 can   (11-12 oz) Mandarin Oranges, drained
 1/4 cup   Almonds, sliced

 Directions

Combine spinach, celery and oranges in a large salad bowland mix lightly. Separately, combine vinegar, olive oil, scallions, salt, pepper, pepper sauce, parsley, and sugar together in a bowl and mix well. Add to salad and toss to coat. Garnish with sliced almonds.
