Mesquite Salmon

Ingredients

 2 pounds  Salmon
 2 Tablespoons   Mesquite Meal, Original Sonoran or Sweet Peruvian
 (or 3 to 4 oz Mesquite Bean Pods)
 1/4 teaspoon  Salt
 1/2 teaspoon   Black Pepper
 1/2 teaspoon  Granulated Garlic
 2 Tablespoons  Olive Oil, Extra Virgin

    
Direction

Preheat grill (indoor/outdoor), oven or pan. Cook salmon that's one inch thick for about 6 minutes each side.

Rub olive oil onto salmon.

Cut salmon into portions if you're using filets. Then sprinkle salt, pepper, garlic and Mesquite meal over Salmon.

If you are using Mesquite Bean Pods soak the pods for about 30 minutes like  wood chips. Then place the bean pods on the fire just before grilling. If you're used to Mesquite wood chips you'll be pleasantly surprised at the flavor you'll get with the bean pods.
