 Mesquite Pancakes

The use of mesquite meal helps to reduce the glycemic load making this dish healthy in addition to great tasting.


Ingredients

 2 cups

 Whole Wheat Flour
 1/4 cup  Mesquite Meal
 3 Tablespoons  Baking Powder
 1/4 teaspoon  Salt
1-3/4 cups  Milk
 2 Tablespoons  Olive Oil
 1 each   Egg, Large


Directions

Pre-heat griddle to medium-high heat

Combine all dry ingredients and mix well. In a separate bowl mix together all liquid ingredients then mix into the dry slowly until completely mixed.

Cakes will be thick but fluffy and tender. If thin pancakes are desired a 1/4 cup of milk may be added.

This will make 4 large pancakes about 9" in diameter.
