Middle East Cabbage Salad


Ingredients 
 
 1/2 head   Green Cabbage, Medium Sized, Shredded
 1/2 cup   Green Pepper, Julianne 
 2 ea  Tomatoes, Medium, Sliced thin
 1/4 cup  Scallions, 2" Slivers 
 4 Tbls   Fresh Parsley, Finely Chopped
 4 Tbls  Fresh Mint, Finely Chopped
 1/2 cup   Olive Oil, Extra-Virgin
 1/3 cup  Fresh Lemon Juice
 2 ea   Garlic Cloves, Large, Thinly Sliced
   Salt & Pepper to Taste

Direction

Combine  the vegetables and herbs in a small bowl.

Combine the oil, lemon juice & garlic into a mixing bottle with a tight lid. Shake until
 frothy then combine dressing with vegetables just before serving.
