Ingredients

Green Cabbage, Medium Sized, Shredded |
| 1/2 cup |
Green Pepper, Julianne |

Tomatoes, Medium, Sliced thin |
| 1/4 cup |
Scallions, 2" Slivers |
| 4 Tbls |
Fresh Parsley, Finely Chopped |
| 4 Tbls |
Fresh Mint, Finely Chopped |
| 1/2 cup |
Olive Oil, Extra-Virgin |
| 1/3 cup |
Fresh Lemon Juice |
| 2 ea |
Garlic Cloves, Large, Thinly Sliced |

Salt & Pepper to Taste | Direction
Combine the vegetables and herbs in a small bowl.
Combine the oil, lemon juice & garlic into a mixing bottle with a tight lid. Shake until frothy then combine dressing with vegetables just before serving.
