Spicy Asian Slaw

Makes 4 servings.

Ingredients  

 3 teaspoons   Rice vinegar
 2 Tablespoons  Soy sauce
 1 Tablespoon  Asian sesame oil
 1/4 teaspoon  Dried hot red pepper flakes
 8 ounces   Packaged coleslaw mix
 1/2 cup   Raisins
 1/3 cup  Thinly sliced scallions
 1/4 cup  Chopped peanuts or cashews (optional)

Directions

Wisk together vinegar, soy sauce, sesame oil and red pepper flakes in a large bowl. Add coleslaw mix, raisins and green scallions. Toss well. Chill at least 1 hour or up to 24 hours before serving. Sprinkle with peanuts, if desired.
