Sweet Potato Salad

Serves 6

 Ingredients 

 4 each  Medium sweet potatoes
 1 cup  Fresh pineapple, cut into 3/4" chunks
 1 cup  Pecans, broken
 1/4 cup  Fresh orange juice
 1 cup  Mayonnaise
 2 Tablespoon  Heavy whipping cream
 1 teaspoon  Vinegar
 1 teaspoon  Curry powder
 1 teaspoon  Fresh grated orange peel
 1/4 teaspoon   Fresh tarragon, chopped

 Directions

Cook sweet potatoes until tender but firm. Peel and cut into 3/4" chunks. Place sweet potatoes, pineapple, pecans and orange juice into a mixing bowl and gently toss until evenly coated.

In another mixing bowl add remaining ingredients and mix thoroughly and pour over sweet potato mixture and toss gently. Place in refrigerator and chill.
